How to make Pizza

This recipe is made for 4 Person.

 

First Step: the Dough!

Sieve 400g of flour "0" on your table with a dash of salt. Then make with it a little mountain. Then make a hole to the top. Dissolve 20g of yeast in 1/2 glass of lukewarm water (about 37°C). Now put slowly your water in the hole you made before, and mix all. While you are mixing add also 2 spoons of olive-oil and other 150 ml of lukewarm water. Make this operation very slowly and stop when the dough doesn't absorb it.

Work the dough very energetically with your hands (make sure you washed them before ^-^): you will must lift the dough and then knock it down on the table; also you must stretch it and make a ball again with it. Make it several times  until it doesn't stick with your table. It will takes about 10-15 minutes.

Step two: the Leavening!

Make a ball with the dough and put it in a floured bowl, then make superficially an "x" with a knife on the top. Cover the bowl with a floured breadth of cloth. Now put the bowl in a lukewarm place until the dough redouble. It will takes about 90-120 minutes before it rises, it depends from seasons.

When the dough is ready put it again on your floured table (so don't wash your table until you finished Pizza) and work it again energetically with your hands as you made before, about for 5 minutes.

Spread the dough to make one or more foil. Before make flat the dough with your hands, then stretch it gently. The dough will must be tall from 0,5 to 1,5 cm, as you like more (in my opinion 0,5 cm is the best). Oil one (or more, as you need) baking-tin with olive-oil. Instead of olive-oil you can use also evry kind of oil you want. Obviously olive-oil gives the best taste, but if you want to make a Pizza a little more light you can use at least also oven-paper (^_^' I hope its the right name, i didn't find it in my dictionary!). Put the foil on the oiled baking-tin and extend it with your hands, until all the baking-tin is all clad. Let's all rise again in a lukewarm place as you made before. This time it will takes about 30 minutes.

Step Three: the Cooking!

Warm up your owen at 240° C. Make a lot of dimples with your finger to cook better. Distribute the ingredients all over the Pizza. You can use what you want: tomatoes, tomato-sauce, bacon, grated vegetables, capers, caper-sauce, olive and so on. Dress all with 2 or 3 olive-oil spoons. This is not indispensable but if you make it you should use only olive-oil and not other kind. Be carefully to not put all the oil in the same point. You should distribute it as well as possible. Cook Pizza in the oven for 15 minutes. Sometimes watch it because some oven  cook faster then others.

Take out Pizza of the oven and add, if you like it, Mozzarella or other kind of cheese. You have to cut it as little cubes before this operation. Dust all with origanum or other sweet herbs. You can use them entire or minced. Cook Pizza again for 5 minutes.

A little advice: add delicate ingredients 1-2 minutes before Pizza is ready. Example: salame, sea-fruit.

 

In italy there are some common kind of Pizza:

- 4 formaggi (four cheeses) with only Parmigiano, Emmenthal, Gorgonzola and Mozzarella

- Margherita (daisy) with tomato-sauce and mozzarella

- Capricciosa (capricious) with tomato-sauce, olives, mozzarella, ham, champignons, small artichokes under oil and sometimes also boiled eggs.
